What I bought was tenderloin, with a little bit of sinew, cut into cubes, not too big
Soak in cold water for about half an hour
Chop onions, ginger and garlic while soaking, according to personal preference
Put in the soaked beef, add cooking wine, turn on the heat, blanch, drain and grind, remove and set aside
Heat oil in a pan, add rock sugar, stir constantly to melt the sugar
Pour in the blanched beef. Fry until it changes color
Add onion, ginger, garlic, bean paste, light soy sauce, pour in hot water, and mince the beef, this is the key.
Pour in the chopped potatoes and carrots.
