Add a spoonful of salt and warm water to the flour, mix it into a fluffy form and knead it into a smooth dough. -

Pinch and wash repeatedly with your hands until the facial water turns white. Pour the facial water into a large basin. -

Wash it five or six times until the water becomes clear and there will be only one piece of gluten left. -

Just steam the gluten with water for about 10 minutes, let it cool and then cut it into pieces or strips according to your preference. -

Leave the washed facial water to settle for two hours. -

After two hours, pour away the yellow water on top, and the remaining dough can be used to make cold skin. -

Boil water in a pot. After the water boils, brush the inside of the dough with a layer of oil and add two tablespoons of dough. -

Chop the garlic into small pieces and add salt, chicken essence, pepper powder, and chili noodles. Heat the oil in a pot and pour it on top. Add light soy sauce, balsamic vinegar, and sesame sesame oil and mix well. That’s it. -

Cold and refreshing, the smooth and chewy cold skin is mixed with shredded cucumber, mung bean sprouts and chili garlic water and is ready to eat.
Tips
1. Chill the steamed cold skin with cold water for a while for easy removal.
2. Add salt to the flour to make the cold skin more chewy.
